February is the time of year in South East Texas where you start watching the forecast and getting ready to plant outside.

Spring is an amazing time of the year with not only things growing but also harvesting fresh eggs.

Living in the country has its perks as well as its drawbacks. With predators coming in many forms. Large rat snakes aren't there for rodents, they are coming for my eggs! Copperheads are a frequent sight, and I had an ankle bite in the Spring of 2025 that required an ER visit. A cottonmouth has only been spotted one time in my tomato garden which I'm thankful I saw before I was bitten.

As we start seeds and begin to grow we are continuously looking forward to a bountiful harvest of fresh vegetables that will make delicious meals. 

The best way to grow your own food is the most cost effective  which is to grow your own vegetables from seeds. When you can start 20 - 30 plants for less than the cost of one vegetable plant start you can buy at a greenhouse, this is the best way.
